Ingredients

  • 2 chickens, jointed and roasted

  • 1 medium onion

  • 500 g mushrooms

  • 1 cup finely chopped darkish olives

  • 50 ml sherry

  • 2 cloves garlic

  • 1 cup dry white wine

  • 2 bay leaves

  • 125 ml cream

  • 1 cup grated cheddar cheese

Method

  • In a heavy Dutch oven or casserole pot, brown the chicken items on all sides with some olive oil and butter. Remove and put aside.
  • In the pot, brown the onions, garlic, mushrooms olives and when browned, deglaze with sherry and scrape any chicken bits from the underside.
  • Add the white wine, bay leaves and cream. Simmer for about 5 minutes.
  • Add the chicken items again with the cheese and simmer for one more 20 minutes or longer till tender.
  • Place partially lined in a 180°C oven for 20 minutes.
